Easy Cheesy Vegan Veggie Noodle Bowl

I love easy so my Easy Cheesy Vegan Veggie Noodle Bowl is perfect for a fast and healthy dinner.

Let’s Cook!

Heat up a saute pan on medium heat. While it’s heating up peel and chop your zucchini. Chop your onion into 1″ pieces. Add both the onion and the zucchini to the pan, you can use a little olive oil or a little veggie stock to keep it from sticking.

Once the veggies are almost done cooking add the spinach and saute until the spinach is wilted.

Wash your Miracle Noodles as per the package directions. Then add them to your pan.

Add your spices and black beans. Stir until heated through.

Add your cheese sauce and stir for 2 minutes or until heated.

In a large bowl add 2 cups of spring mix. Top with your noodle mixture. Top with some red pepper flakes and hemp seeds.

This will make one large serving or two smaller servings. I am a hungry girl so I eat it in one serving.
